    Chocolate Cake ~ Moist n Eggless

    Continuing in the series for the Bake-a-thon, next comes the Chocolate Cake. The recipe that I had written down actually said Moist eggless Chocolate Cake. However for the alphabet sake I had to retain just Chocolate Cake. After all it's just that end of the day.
    I baked it couple of days back, same time when I was trying hard to make the Corn Cheese Croquettes. Somehow the boys realized that I was baking a cake, most surely a chocolate one this time. So they were literally behind me every step. Finally without anything I had to just give them as they were so impatient. I had planned for another Ganache. But it was to be just this and a sauce that was already at home.
    While I was so happy seeing their reaction, I wished I had more time to click better pictures. And moreover during night, the chocolate looks so dark that I prefer day light. Anyway I can't help with the pictures, with the taste being so amazing.

    The cake was really so moist and though it did require a little bit sweetness, it was fine. This makes a great dessert!

    Chocolate Cake ~ Eggless

    Ingredients Needed:

    Dry ingredients:

    All purpose flour - 1 cup flour
    Powdered sugar - 1 cup
    Cocoa powder - 1/2 cup
    Baking powder - 1 tsp
    Baking soda - 1 tsp
    Salt - 1/2 tsp

    Wet ingredients:

    Oil - 1/2 cup
    Hot water - 1/2 cup
    Cold milk - 1/2 cup
    Vanilla essence - 1 Tbsp
    Yogurt/  Curds - 2 Tbsp

    Method

    Pre-heat the oven at 180 degrees C. Grease a baking tin with butter an flour.

    Dry ingredients:

    In a bowl sift together flour, sugar, cocoa powder, baking powder, baking soda and salt. Keep aside.

    Wet ingredients:

    In a bowl whisk together 1/2 cup oil and 1/2 cup hot water till well blended. Let it cool down a bit.

    Once done add the milk and vanilla essence. Mix well.

    Add the curds. Mix well.

    Now gradually pour the wet ingredients into the dry ingredients and whisk them together.

    Pour it in a greased tin.

    Bake it for 35-40 minutes at 170 degrees C or till the toothpick inserted comes out clean.

    Smother some chocolate ganache/ sauce if you want to or you can eat it like this.
