    Classic Chicken Fry!

    My cousins had dropped in for dinner and I planned to prepare my Nawabi Biryani and some chicken fry. Since the time I saw Cinnamon's Chicken fry, I wanted to make it for hubby dear. Now was the perfect chance. As I had to squeeze in with my time on preparing biryani and a fry I modified the recipe a bit. I remembered Amma making something like this, but didn't remember what all she added. Everything came out well and yes, hubby dear liked the chicken fry a lot and wanted me to prepare again. Thanks Cinnamon, this is highly recommended!

    Preparation Time : 15 mins
    Cooking Time : 30 mins
    Cuisine : Andhra

    Ingredients:

    Chicken: 500 gms

    For Marinade
    Onions - 2 medium pureed
    Green Chillies - 2
    Ginger garlic paste - 1 tsp
    Curd - 2 tbsp
    Salt to taste

    For Fry

    Onion - 1 medium
    Turmeric powder - a pinch
    Chilli powder - 1 tsp
    Coriander powder - 1 tsp
    Garam masala - 1 tsp
    Oil - 1 tbsp

    Coriander leaves and Curry leaves, to garnish
    Cashews, to garnish
    Butter - 1 tspMethod to prepare:

    Cut Chicken to desired size. Take the ingredients for marinade and make a fine paste. Marinate chicken for 15 mins.

    Chop onions finely. Heat a kadai with Oil and sauté onions till its brown. Add chicken with the marinade along with Chilli pw, coriander pw and turmeric pw. Cook on high flame for 10 mins, constantly stirring to prevent it from burning.

    Simmer for 20 mins or till chicken is cooked. Add finely chopped coriander leaves .

    Take butter in pan, toss all the ingredients for garnishing and add to the above.

    Enjoy!
