Deciding on the baking tray was another thing. I finally decided on this bundt tray and I think this batter is best suited for this mold. It really turned out so good.
Ingredients Needed:
All purpose flour - 1 & 1/4 cup
Dates, seedless puree - 20
Milk - 1/2 cup
Condensed Milk - 1/2 tin
Baking powder - 1 tsp
Cooking Soda - 1/4 tsp
Walnuts - 1 tbsp
How to make the cake
In a pan, boil the milk along with dates. Allow to cool and make a puree.
In a bowl, take the dates puree and beat with condensed milk. Add the flour and finally the baking powder and soda. Mix in the chopped walnuts and pour into a prepared bundt tray.
Bake in a pre heated oven at 185 C for 15 - 17 mins or till a knife comes out clean when inserted.
Dust with icing sugar.
This stays good at room temperature for a couple of days.
Serve warm.

Three cakes is a lot to bake unless you have an army to feed. Nice one. I had made a vegan date cake once and it was so good but stuck to the pan, so no post until I bake again.

The same used to happen with me, when baking/cooking a lot of things one after the other. I had made a similar dates walnut cake recently - but without the condensed milk. I too felt it suits well in a bundt/ring mold.

Divya, Hahahah...now I remember, reading your comment I realized I was thinking I forgot something. I wanted to add oil, but forgot to add in the end. Surprisingly the cake was crumbly and soft..:)..thanks for asking. So this recipe is really without oil/butter..:)
