    Eggless Rich Dark Christmas Fruit Cake

    A Merry Christmas to all my readers!
    Christmas without a fruit cake is not possible, especially in my case, it has to be eggless. It's been a tradition that I have been following for some years now. Bake an eggless Fruit Cake, with the goodness of dry fruits and all that makes a Christmas.
    This time for a change I added cocoa to make a chocolate moist, rich Christmas fruit cake. I adapted this from Lathamma's version. She had made it in MW, I will be trying that out as well soon. For now, it's a regular cake baked eggless.

    Eggless Rich Dark Christmas Fruit Cake

    Ingredients Needed:

    Plain flour - 1 cup
    Butter - 1/2 cup
    Sugar - 3/4 cup
    Milk powder - 1/2 cup
    Milk - 1 cup
    Curds - 1 tbsp
    Finely chopped dry fruits, nuts and peels - 1 cup
    Grated chocolate or cocoa powder - 1/4 cup
    Baking powder - 1/2 tsp
    Baking soda - 1/4 tsp
    Spice powder* -1 /4 tsp

    How to make the Fruit Cake

    Warm 1/2 cup milk and soak the chopped fruits to soak in the milk for 1 hour.

    In a small cup mix the curds and baking soda and keep it aside.

    In a mixing bowl, take the flour, sugar, spices, cocoa powder, baking powder, Whisk everything together.

    Melt the butter and add to the bowl, combine everything together.

    Finally add the curd, soda mixture. Mix thoroughly.

    Add the rest of the milk, depending on how the batter consistency is.

    Pre heat the oven at 185 C. Grease a pan with butter and dust with flour.

    Pour the batter into the pan and bake at 185 C for 10, reduce to 170 and bake for another 20 mins.

    Notes:

    You can use 2 cardamoms, 3 cloves, 1/4 of nutmeg, 2 inch piece of cinnamon powdered along with sugar for the spice powder.

      Most of the of you made fruit cake on Christmas eve. That is nice. Chocolate fruit cake is a nice variation to regular cake and am sure your children must have loved this one.
