Nachni Uttapam or Ragi Uttapam is an easy dosa made with Finger Millet flour and is very healthy for any meal.
Since this millet dosa is widely prepared across India, I was unable to tag it to a particular state. However, I borrowed the Nachni word for Ragi Millet from Marathi. While I have made Ragi Dosa with Urad dal batter, in this version I made Uttapam with onions. You can practically add as many vegetables as you want to make this very healthy.
I had made this when I was making the 8 different dosas when I had ground Urad dal batter ready. So you can just add the ragi flour to it and make a batter. I have a Ragi Adai that is very filling as well and a Sprouted Ragi Dosa as well.
So for N, its Nachni Dosa in the AtoZ Flatbread and More, where I am making AtoZ Dosa Varieties. Want to know what I made for N in the AtoZ Indian Flatbreads, hop it over!

Nachini Dosa sounds like a healthy version of a Dosa and yes if one has urad daal batter it would be easy to make it . Ragi is one flour which I need to work with , so when I see something with ragi I go Wow !

O wow! Love this easy uttapam as it doesn't need any fermentation and is looking so crisp. I'm getting tempted to eat it. Sambar used to be a weekly affair in my family. I haven't made it for the last one month because it is my son's favorite and he is now in Canada. So don't feel like making it. But your this post is surely going to take me out of this affliction.

I think I am going to adopt your idea of keeping ground urad dal in the fridge and then add different grains or flours to it to make varied dosais. Fabulous ragi utthapam...so flavorful and yum!!

Two years back I used to have a mixed millet dosa batter always in the fridge. Your dosa reminds me of that. I haven't made it with just ragi, but I am sure it is so yum. With all those toppings, this is a fantastic filling meal..
