    Soya Chunks Coconut Pulao with Masala Eggs is a wonderful combination you can make for a lazy weekend meal. The Milk Pulao is not mild in spicy and hence the spicy Masala Eggs makes a good combination to be served along with it.

    For the second day under BM# 49, Cooking for one / Bachelor Cooking, I made this simple spiced Soya chunks, cooked in coconut milk pulao. I was cooking just for my husband, while I made vegetarian for the rest of us. So I decided to make it more filling and paired it with Masala Eggs.I have started including Soya chunks more in my cooking for a protein supplement and it really works out best as they all like it. In fact, at times I tell my boys that it's chicken and they are happily eating it. At times they know about it and still pretend that they got convinced about it.

    Anyway, both this pulao and the egg made a great combo, or at least that's what Hubby dear told me. The pulao is not very spicy, with mild spices and rich in coconut milk and the egg masala makes sure to take care of the spicy kick!

    The best part was, that my kids also loved this, who ended up seeing their father eating a different meal. So this is kids approved as well!

    Soya Chunks Coconut Pulao with Masala Eggs

    For Soya Chunks

    1/2 cup Soya Chunks
    Salt to taste
    1 tsp Butter
    1/2 tsp Red Chili Powder
    1/4 tsp Cumin Powder
    A Pinch Turmeric Powder

    For the Pulao

    1/2 cup Rice
    1 Bay Leaf
    1 Cloves
    1 inch cinnamon
    1 Cardamom
    1/2 medium Onion, julienne
    2 medium Green Chilies
    1/2 tsp Ginger Garlic paste
    Salt to taste
    2 tsp Oil
    1 cup Coconut Milk Thick
    1/4 cup Water

    For Masala Eggs

    2 nos Eggs boiled
    1/2 cup onions
    1 tsp Ginger Garlic paste
    1/2 cup Tomato Puree
    Salt to Taste
    1/2 tsp Red Chili Powder
    1/2 tsp Coriander Powder
    1/4 tsp Garam Masala
    Handful Coriander Leaves
    1/2 cup Water if required

    Making the Pulao

    Wash and soak rice for 20 mins.
    Boil to boil a huge pan of water and cook washed soya chunks for 10 mins. Drain and squeeze out water.
    In a nonstick, add butter, add the soya and toss with salt, red chili powder, and turmeric powder. Saute for couple mins. Keep it aside.
    In a pressure cooker pan, add oil, add all the whole spices, saute for a min. Then add ginger garlic paste, slit green chilies, onions. Saute till the onions turn colour.
    Then add drained rice and combine everything. Add the spiced soya chunks, thick coconut milk, and water. Add salt and bring to boil.
    Pressure cook till done.

    Making the Masala Eggs

    Saute onions with ginger garlic paste, then add tomato puree, salt, red chili powder, coriander powder. Then when the masala is cooked, add boiled shelled eggs, add garam masala, and chopped coriander leaves. Can add 1/2 cup water if required.

    Serve with pulao

    Ingredients

    For Soya Chunks

    • 1/2 cup Soya Chunks
    • Salt to taste

    Instructions

    Making the Pulao

      That looks to be a nice flavorful Pulao. Soya is a good source of protein but some how I cannot eat it for the physcological reasons...feels like non veg!!

      Nice one Valli....unique way to add coconut milk in pulao. I've tried once in a friend's place and I loved the subtle taste of coconut milk. Nice idea to add soy chunks too...

      Lot many times, kuttu comes and eats from my plate, as i normally cook millets separately for myself. He thinks i m eating something delicious leaving him out! 🙂 Soy chunks pulao looks very yum!! i can imagine the flavor and aroma of coconut milk in the rice.
