Today’s recipe is all about how to make an easy Chicken Fry within 30 mins. That’s all it takes and we were surprised that it was so quick to make. Kids love chicken fry and we keep trying out new combinations and recipes. The ones that get liked by the kids, we end up making it very soon. This recipe was already repeated a couple of times.
With all of us being vegetarians, we make it a point to cook chicken for the kids at least twice and mostly get stuck with making Chicken gravy all the time. While Konda keeps asking for some dry dishes. So we end up trying to make new recipes as she is very fond of trying out new tastes, of course, only with chicken.
The basic chicken gravy that Amma makes is very simple and much more changed than what I might have shared. So one of these days, I must make a point to click step by step pictures for that gravy. Meanwhile, I managed to click for this simple roast, which makes it really nice to have dish for chicken lovers.
I was supposed to have taken up Vegetarian Grilling and was looking forward to that. Unfortunately, I was least prepared and couldn’t come up with any new ideas. So had to resort to my nonveg cooking that we mostly make from our diaries or from TV Shows. This happens to be from a newspaper clipping.

Easy Chicken Fry | How to Make Chicken Fry
1/2 kg Chicken
1 cup Onion
1 tsp Ginger grated
1 tsp Garlic grated
1 tsp Red Chilli Powder
1 tsp Coriander Powder
1/2 tsp Garam Masala
1/4 tsp Turmeric powder
Salt to taste
1 tsp Pepper Powder freshly ground
2 tsp Ghee
1 tsp Butter
Wash and cut the chicken into bite size pieces. Drain in a colander.
In a nonstick pan, heat ghee, saute onions till brown. Then add chicken along with grated ginger, turmeric powder, red chilli powder, coriander powder, garam masala.
Fry for 5 mins on high, till the chicken is well coated and browned. Add 1/2 cup water and simmer for 10 mins.
In another pan, add 1/4 cup water, butter, then grated garlic, add the above roasted chicken and fry well till the whole mixture becomes dry. This takes about 10 mins.
Next, add freshly ground pepper powder and serve hot.

I use the same spice mix for my paneer grilling. Your chicken version looks so good..
So besides paneer the kids eat chicken ! It seems you are the only vegetarian in the house , how come ?
