    As part of the Combo Dishes under BM#46, I made this Carrot Paruppu Usili along with Mor Kuzhambu.

    I was thinking the carrots that I used were sweet and this usili might end up being sweet. However, it was all balanced well. This stir fry is such a healthy and protein-packed dry saute. I made this from PJ version.

     


    Carrot Paruppu Usili

    Carrot - 4 medium
    Channa Dal - 1/2 cup
    Red Chilies - 4
    Coconut - 2 tbsp
    Salt to taste

    For Tempering
    Mustard, Urad Dal - 1 tsp
    Channa dal - 1 tsp
    Red chilies - 3 - 4
    Curry leaves a few
    Oil - 2 tsp

    How to make the Usili

    Soak chana dhal in water for 1/2 hour.
    Then coarsely grind it along with red chilies, cumin seeds.
    Make a paste and MW in a greased bowl for 1 min with 30 secs spurts. Grate into a fine powder.
    Wash and finely chop the carrots. MW for 10 mins.
    In a wide kadai, add oil, saute the seasoning ingredients, then add the grated lentil.
    Saute well and then add the boiled carrots.
    Adjust salt and serve hot. This takes about 10 mins

    Another recipe similar to this is the Andhra Style Cabbage Patoli.

      Looks great and interesting...I wish my folks were fond of carrot, all the same will give it a try as the Daal will cut down the sweetness of carrot.
