    Dark Chocolate Orange Ganache

    Dark Chocolate Orange Ganache is an infused orange dark chocolate ganache that makes a wonderful frosting for cakes and even as just a dip.

    I was thinking very hard about what to make when I suddenly remembered discussing with Gayathri on the ganache she made. She was talking about the new ganache she made by infusing orange. I thought I will do that as I was sure my kids will love this.

    This is part of the Sauces and Preserves for BM#74, week 3.

    Step by Step Pictures for making Dark Chocolate Orange Ganache

    Ingredients

    1 cup Dark Chocolate Compound
    2 tbsp Milk Chocolate Compound
    3/4 cup Cream
    1 Orange Peel

    Instructions

    In a saucepan, heat the cream on low flame, till it starts bubbling a bit. Add the orange peels, let it simmer till the cream boils.
    Cover with a lid and keep it aside for a couple of hours.
    Strain the cream and remove the peels.
    Heat the saucepan and add chopped chocolates. Cook for a couple of minutes.
    Cover and switch off the flame.
    Whisk well till the chocolate mixes well.
    Store in an airtight container.
    Use on cakes or as required.

      I can imagine how good this must have been. Is there a chance of the cream splitting when you add the orange peels?

      Reading the recipe first thing that came to mind was, will the cream curdle as orange is a citrus fruit and the second was, how about adding orange rind instead? I love orange rind in bakes, desserts and my mind automatically imagining the flavor of the ganache with rind.. 🙂
