I have always had the tradition of baking a Christmas Cake for Christmas Day. This year I had to break it and had to make do with these muffins. Since the theme was muffins, I wanted to make sure the muffin had the regular ingredients that go into the Christmas Cake.
I couldn't post it on the day, anyway, this finally comes up today. This Muffin is for my eleventh day of Bake-a-thon and you can check out the collection at the end of the post for my friends who are doing this along with me. Eggless Christmas Nuts and Fruits Muffin
How to make the Muffins
Soak the nuts and fruits in the orange juice for 30 mins.
Preheat the oven to 185 degrees C
Line the 12 cups muffin pan with paper liners or just spray it with oil.
Add white vinegar to the milk. Keep it aside for 10 minutes.
Now take all-purpose flour, sugar, baking powder, and salt in a bowl. Mix it very well using a wire whisk.
Make a well in the center of the dry flour mixture. Add prepared milk mixture, oil, and vanilla extract.
Combine everything together. Do not over mix it.
Add nuts and fruits along with the juice. Fold it in.
Divide the batter into 12 muffin cups.
Bake in preheated oven for 12 minutes or till the toothpick inserted in the center of the muffins comes out clean. Then remove it from the wire rack.
After 5 minutes remove the muffins from the pan and let them cool completely on a wire rack.

- 2 cups All purpose Flour
- 1 cup Milk
- 1 tsp White Distilled Vinegar
- 1 cup Sugar powdered
- 1 tbsp Baking Powder
- 1/2 cup Olive Oil
- 1/2 cup Orange Juice
- 1 tbsp Tutti Frutti
- 1 tbsp Walnuts
- 1.5 tbsp Almonds
- 1 tbsp Raisins
- 1 tsp Sultana Raisin

I have to say that these muffins looks really cute with the domed top... I am not a fan of fruit cakes, but this one with the orange flavor is definitely tempting me...
