Mangai Thokku Recipe or Grated Raw Mango Pickle is a condiment we prepare with raw or unripe mango. During the season, this pickle is the best way to enjoy the produce. We make it with freshly grated mango with fresh masalas.
During the Summer season, its time for Mangoes. We make different dishes with the raw or unripe mangoes. Amma mostly makes it every year, this time I learnt the recipe from her and sharing it here. This Mangai Thokku is a regular one, thokku is Tamil word. The recipe is very simple and easy to make as well.
It is an instant type of pickle, with short shelf life, however tastes great with rotis, does and curd rice. We make another version of Mango Pickle, which is quick as well. The other version is this Vankaya Mamidikaya Pachadi.

Ingredients for Mangai Thokku Recipe
Mango - Fresh raw or unripe mangoes are used to make this pickle.
Spices - This pickle is flavoursome with freshly ground fenugreek powder
Oil - For all pickles using Sesame Oil / Gingelly oil lends an excellent taste to the pickle. You can use regular oil if you don't have.
Jaggery - We normally don't use Jaggery however, you can add a small bit to balance the bitter fenugreek powder.
Instructions
Since this is a pickle, make sure you pat dry the mangoes and have all the ingredients ready at hand.
For making this Mangai Thokku Recipe, wash and wipe the mangoes clean. Then grate and measure 2 cups.
Dry roast the methi seeds and powder it fine. Keep it aside.
Heat a kadai with oil, add mustard seeds, hing.
After few seconds, add the grated mango, turmeric salt, red chili powder, cover and cook till the oil comes out.
Make sure to keep stirring the mix else it might get burnt in the bottom.
The pickle is ready, when you will find oil oozing out on the sides, the grated mango very tender to touch.
At this stage add jaggery if using, followed by dry roasted methi powder, mix everything well and remove.
Allow to cool down, store in a dry container and remove as required using a dry spoon.
Storage
This Grated Raw Mango Pickle is a short shelf life pickle. So if you want to store this, refrigerate it and use as you want.
Make sure you always use dry spoon to remove the pickle for this Mangai Thokku Recipe.

Mangai Thokku Recipe | Grated Raw Mango Pickle
Ingredients
- 2 cups Mango raw/unripe grated
- 5 tablespoon Sesame Oil / Gingelly oil
- 1/2 teaspoon Mustard Seeds
- 1/2 teaspoon Asafoetida / Hing
- 1/4 teaspoon Turmeric Powder
- 2 tablespoon Red Chili Powder
- 1/2 teaspoon Jaggery optional
- 1 teaspoon Fenugreek Seeds / Methi

However, each time you can remove portion you need, cook over fire or microwave for a minute in 30 second interval spurts
