    Mutton Roast ~ Andhra Style

    This Mutton Roast Andhra Style is a delicious roast we make with ground spices. It makes an excellent dish to enjoy your meal.

    As there is evidence that chicken is fed more unwanted feed, we have been getting more mutton for the kids. I am making a plan to redo my old posts, so the old recipes will be getting a revamp with respect to pictures, etc.

    This roast was much liked by all at home and is a typical spicy Andhra dish. For the last day of the week, I have this spicy mutton roast. You can check out this Mutton Chops if you are looking for another roast version.

    How to make Mutton Roast ~ Andhra Style

    Ground Spice Powder
    Dry roast all the ingredients and grind to a fine powder.

    Wash and pressure cook the mutton with enough water with salt and a pinch of turmeric powder for 3 to 4 whistles. Once the pressure falls, drain the mutton and save the stock.
    Heat a kadai with ghee and oil, add the onions and saute well.
    Add the ginger-garlic paste and fry well.
    Now add the boiled mutton and combine well.
    Add the red chili powder, coriander powder, salt, and turmeric powder. Cook on high flame for 5 to 7 mins until the masala coats the meat all over.
    Once the meat is well coated, add a cup of the mutton stock and bring to a boil and cook till the water evaporates.
    Add the ground spice powder and cook on low flame till the meat is well done.
    Sprinkle the coriander leaves and serve as a side dish.

    Ingredients

    • 2 tsp Ghee
    • 1 tsp Cooking Oil
    • 1 cup Onions finely chopped
    • 1 tsp Ginger Garlic paste
    • 250 gms Mutton
    • 2 tsp Red Chilli powder
    • 2 tsp Coriander Powder
    • Salt to taste
    • 1/4 tsp Turmeric powder
    • 1/2 cup Tomato puree
    • 1 cup Mutton Stock
    • Handful Coriander Leaves

    • 5 Cashews
    • 1 tsp Peppercorn
    • 2 to 3 Cloves
    • 1 tsp Cumin Powder
    • 1 inch Cinnamon
    • 1/2 tsp Fenugreek Seeds
    • 1 tsp Coriander Seeds

    Instructions

      Love the mutton roast Valli, especially the fresh ground spice mix.. It must've added so much flavour to the dish.
