Mutton chops are a new family favorite! Since it was something I hadn't prepare before, I had to ask Amma for recipes. She shared her traditional recipes, and they were an instant hit with my kids. This version is a spicy, semi-gravy masala that pairs perfectly with rice or roti. Amma has a special spice powder she uses for her non vegetarian dishes and it worked like a charm.
This Authentic Andhra Lamb Chops is the star of today's Non-Veg Thali, served alongside Colour Rice, Mutton Pulusu, and Liver Fry for the ultimate weekend feast.

Ingredients to make Mutton Chops Masala
- Onions - We use Onions as both chopped as well as puree. This helps to bind the masala and for making this a semi gravy dish
- Tomato - Use ripe tomato puree that adds body to the dish.
- Spice powders - Regular Red chili powder and coriander powders along with turmeric powder is added.
- Coconut - We use a thick coconut paste that adds a wonderful nutty taste to the dish.
- Herbs - Both Curry leaves and coriander leaves are a must for the aromatic flavour.
- Special roasted Spice Powder - We dry roast the whole spices listed in the recipe and use it for making this Authentic Andhra Mutton Chops
Instructions for Making Authentic Lamb Chops

Making of Mutton Chops Masala
We use roasted spice masala to enhance the taste of these chops.
Once the masala powder is ready, keep it aside and get chops ready.
Pressure cook the chops and keep it aside.
Start by heating oil in a kadai, saute onions till brown.
You can sprinkle some water for the onions to get well cooked and melted
Next add the ginger garlic paste followed by tomato paste and onion paste.
So when all these pastes well cooked well add the spice powders.

Finally when the masala is well cooked add the cooked chops along with water and let it dry on its own.
Add the ground spice masala powder and mix well, followed by coconut paste.

Adding curry leaves, coriander leaves makes this so flavoursome.

Substitutions you can do
- You can use Lamb Chops instead of Mutton → Lamb Chops
- If you don't have curry leaves, you could try using bay leaf, however taste might change
- Instead of coconut paste, you could use thick canned coconut milk.
FAQs
Mutton is the meat from adult sheep and has a stronger flavor, while Lamb is the young one and its meat is very tender. This recipe works perfectly with Lamb too.
Yes, you can increase the cashews or add melon seeds for the required creaminess. However, poppy seeds adds that extra taste to this dish.
To get the meat tender it is always best to pressure cook for easy process and tender meat as well.

Ingredients to make Mutton Chops Masala
- 500 gms Mutton Chops approx. 1.1 lbs
- 1 cup Onions
- 1/2 cup Onion Paste
- 2 tsp Ginger Garlic Paste
- 1/2 cup Tomato Puree
- 2 tsp Red Chilli Powder
- 1 tsp Coriander Powder
- 2 tsp Spice Powder
- Salt to taste
- 1/4 tsp Turmeric Powder
- 2 tbsp Coconut Paste (thick)
- Handful Curry Leaves
- Handful Coriander Leaves
Spice Powder
- 2 tsp Coriander Seeds
- 2 tsp Poppy Seeds
- 1 tsp Peppercorns
- 1 tsp Fennel Seeds
- 5 - 6 Cloves
- 2 inch Cinnamon
- 2 nos Cardamom
- 6 Cashew nuts

How to make Mutton Chops Masala
Spice Powder
- Dry roast all the spices, allow to cool. Grind to a smooth powder.
For the Gravy
- Wash and pressure cook the mutton chops with a pinch of salt and turmeric powder.
- Heat a kadai with cooking oil, saute onions till brown.
- Add ginger garlic paste and saute well.
- Next, add the onion paste and saute well.
- When the entire mixture gets cooked well, add the tomato puree.
- Add the red chili powder, coriander powder, and turmeric powder.
- Saute everything well, add cooked mutton chops with 1/2 cup water.
- Add the spice powder and coconut paste. Continue cooking for 5 mins.
- Then, add the herbs and simmer till the water is all evaporated.
Notes
- Poppy Seed Substitute: If you can't find white poppy seeds (Khus Khus), you can substitute them with an equal amount of raw cashews or melon seeds (Magaj) to get that signature thick, creamy gravy texture.
- Coconut Tip: Use fresh or frozen grated coconut for the best flavor. If using desiccated coconut, soak it in 2 tablespoons of warm water for 10 minutes before grinding it into the paste.
- Serving Suggestion: This semi-gravy is traditionally served as part of a South Indian Thali. It pairs best with "Colour Rice" (spiced ghee rice) or soft rotis to soak up the masala.
