    Vegetable Fried Rice is an easy to make quick rice with vegetables and cooked with sauces that kids will love it. This version of veg fried rice has mixed vegetables that make it healthy as well.

    For the final day of cooking for my Anniversary Party, I have a party delight. The deadly Vegetable Fried Rice with Cauliflower Manchurian. I have so many versions of these two already, I find it amusing that I cooked up this again. Our usual version of Chinese Fried Rice with Cauliflower Manchurian is always a hit. After that, we have made so many different versions, each giving so much variation as required. If you are looking for other fried rice varieties, you would love this Chicken 65 Fried Rice.

    Today's version is different from our usual fare, not very much. However, the smallest change that makes all the difference is what I have felt! I always felt with so many different recipes all the time being made, I had to record this here so that I can remember later. Special mention here is that the entire set-up is styled and clicked by Konda.

    How to make the Vegetable Fried Rice

    Cooking the Rice
    Since the rice has to be dry and separated, using rice that was cooked the previous day surely helps. Else while cooking on the day, make sure you don't overcook the rice.
    Wash and soak the rice for 15 mins. Drain and cook in 3 times water till almost done, drain the water and fluff the rice well. Spread on a plate for the rice to cool down. If you are using a day's old rice, this turns out even better.

    Making the Vegetable Fried rice
    Prep the vegetables and keep them ready.
    In a wide Kadai, heat oil, saute spring onions, and minced garlic. Tilt a bit for the oil to reach the flame, for the smoky effect.
    Then add the chopped vegetables, saute on high flame. Add the soya sauce, green chili sauce, pepper powder, and salt. Combine everything well and keep stirring till the vegetables get cooked.
    Now add the cooked rice and mix well. Adjust the seasoning and add salt and pepper if required.

    Ingredients

    • 2 cups Basmati Rice
    • 1 cup Mixed Vegetables (Carrot, French Beans, Cabbage), finely chopped
    • 2 tbsp Capsicum chopped finely
    • 1/4 cup Onion
    • 1 Bunch Spring Onions
    • 4 to 5 cloves Garlic finely minced
    • 1 tsp Soya Sauce
    • 1 tsp Green Chilli Sauce
    • 1.5 tsp Pepper powder
    • 2 tbsp Cooking Oil
    • Salt to taste

    Instructions
