    Gluten-Free Vegan Butter Less Sticky Banana Bread is as the name says, a sticky cake made with gluten-free flours, sweeten with demerara and honey.

    I am not into baking gluten-free or vegan or butterless. I am always for moderation and won't mind trying everything within my vegetarian diet. However, with the theme being Banana Bread, I wanted to try my hand at using the different flours I have stocked for various other dishes.

    I measured out all the ingredients and went with Demara Sugar, with specific thoughts of using 1/4 of a cup, and couldn't understand why I ended up 3/4th cup. The cake turned out very sticky and very sweet. I had a tough time even slicing it. I had to continue baking for another 10 mins. Then had to microwave for 2 to 3 mins before handling it.

    I wanted to ditch it and make another Banana Bread, trust me, I still have so many to try. However, surprisingly, Hubby Dear loved it. It is very hard to please him when it comes to cakes, as he likes hard cakes. And we are eternally in search of soft cakes. Whenever I give him cakes, he says he only remembers cake from the bakery he still remembers eating during his childhood.

    He always says cakes have to be hard and firm. Not the soft, melt-in-the-mouth texture. I am open to all ideas and especially when it comes to pleasing one's taste, I seek nothing more. So this cake gets to be recorded. If you are the kind who can't take in sticky, sweet, hard cake, then please just skip through the recipe and enjoy the pictures.

    Gluten Free Vegan Butter Less Banana Sticky Bread

    How to make Banana Bread

    Dry roast the oats, allow to cool, and grind to a smooth flour.
    Place the almonds on the hot pan for 5 mins, then grind it to a smooth flour.
    In a bowl, add the ground flour along with rice flour and buckwheat flour.
    Add the demerara sugar and honey, beat well.
    Add banana puree, oil and combine everything together.
    Then add baking powder, baking soda.
    Followed by chopped walnuts and oats
    Preheat the oven to 185 C
    Transfer the batter to a loaf pan and bake the cake for 40 mins.

    Notes:
    Check if done, mine was sticky at 40 mins, continued baking for another 10 mins.
    However the cake was sticky because of the demerara sugar, so had to microwave for 3 to 4 mins.
    The cake will turn hard once it cools down. And it will be sticky.
    *You can add 1/4 cup Demara Sugar, I wasn't sure what made me add 3/4 cup since I actually was thinking about 1/4 cup only.
    I noted both because if you end up liking that sticky texture Demara gives, you can use that.

      I don’t mind a sweet and hard cake , but never tried a sticky one ! Glad at least your hubby relished it , so must say even mistakes can be good and make people happy .

      First of all there are so many good ingredients going into that cake... and I love the combination of honey and sugar... like you I also feel 3/4 cup would have been sickeningly sweet! But if the husband enjoyed the sticky cake, then surely it must have been good. Like you say, we always look for fluffy ones that we forget that there are other textures too... 😀

      Roasting Oats for a cake is a wonderful idea. And i should say, comparing all other versions of banana bread, this one seems so yum!!

      Your experiments with banana bread are very interesting. I am not a fan of those soft cakes especially those softened with sugar syrup. I would take a firm cake anyday

      Interesting!! How a minute change in the recipe makes way for a new dessert or cake!! I will love to call this pudding cake!! Also loved the use of multiple flours and roasting oats before adding!!
