    Cauliflower pakoda, also known as gobi pakora, is a crispy and delicious Indian tea time snack made with fresh cauliflower florets, gram flour, and spices. This easy cauliflower pakoda recipe gives you perfectly crunchy fritters.

    About this recipe and some memories!

    This pakoda also referred as Gobi ke Pakode is crunchy and delicious Indian fritters made with gobi florets, gram flour along with other spices. It is one of the simplest, easiest snacks we can make during the season.

    As part of the Mega Blogging Marathon, where we cooked Thalis. I chose to make a platter theme for the first week, where I featured this Pakoda Platter as part of the menu. Since I was making different pakodas, this was our meal that dinner.

    I made different pakodas like Bread Bajji, Cashew Pakoda, Onion Ring Bajji, Paneer Sandwich Pakora and served it with Tomato Ketchup, Green Chutney, Coconut Chutney, and Instant Mango Pickle.

    Though I have so many different versions of cauliflower pakora already on the site, this version with besan and rice flour was not there and I had to share it.

    During the season, we get loads of very good gobis and we make sure we enjoy it to the maximum.

    Ingredients you need

    • Cauliflower - Season's best cauliflower that are cleaned, soaked in salt water and rinsed well. These florets are crunchy and fresh.
    • Flour - We use a mix of both Besan/ Gram flour along with Rice flour that gives crispiness to the pakodas.
    • Other ingredients - To spice this up, I have used red chili powder along with salt and turmeric.

    Instructions to make Cauliflower Pakoda Step by Step

    Clean and cut the cauliflower into small florets.
    Blanch it in hot water for 10 minutes or you can cook it for 5 mins with salt and turmeric powder.
    Drain completely.
    In a bowl, take the flours and mix well with salt, turmeric powder, and red chili powder.
    Add the drained cauliflower and toss it well with the flour.
    Sprinkle water to coat the cauliflower well flour. Do not add more water as we will end up needing more flour. The coating should be just enough to cover the cauliflower.
    Heat a kadai with oil, when hot, deep fry in batches.
    Drain to a kitchen towel.
    Serve hot with chutney, and sauces.

    What is cauliflower pakoda made of?

    We can make cauliflower pakoda with different flours. The basic flour used is gram flour or Besan. Along with this flour, we can add in different spices to make it different.

    How do you make pakoda crispy?

    To give crispiness to the deep fried fritters, we use rice flour. You can add corn flour, maida or all purpose flour as well.

    Can I bake cauliflower pakoda instead of frying?

    Yes, after coating the florets, you can bake it in 180C for 15 mins. Ensure you shake off the excess flour sticking to the florets.

    What is the shelf life of these fried pakodas?

    Since these are flour based crispy deep fried fritters, shelf life is very short. Maximum they will stay crispy for about 30 mins to an hour. However, you can store these at room temperature for about 4 to 5 hours. However, they will turn soggy.

      Gobhi pakoras are one of the favourite ones among all other pakodas. I have never made small ones like this , we always use a big chunky floweret , now I will make your style , they look so good .
