Aam ki Launji is a quick and easy pickle to make with raw mango. To make this pickle, we cook mangoes with spices and powders that make it a wonderful side dish for rotis.
First of all, planning a menu for Rajasthani Thali, I wanted to include so many other dishes as well. Then I realized that I may not have enough time to prepare all of those. Finally, I knew I had to make one chutney/pickle at least. You hardly need much time to make this dish. The recipe is very simple, so I made a small portion and enjoyed it with the meal.
The whole meal turned out to be so good that I wished I had more time to include some more dishes. Though we do have so many mango chutneys and pickles, we have never made it this way with so many spices.
Aam Ki Launji is part of the Rajasthani thali I cooked. This tasted so good with Rajasthani Masala Tikadia, Paneer Gatta Sabzi, and Moong Dal.

How to make Aam ki Launji
Heat a nonstick pan with oil, add the fennel seeds and nigella seeds and sauté on a medium flame for a few seconds.
Next, the peeled raw mango cubes, mix well, and cook on a medium flame for 2 minutes, stirring continuously.
Add 1/4 cup of water, coriander powder, chili powder, turmeric powder, sugar, and salt, mix well and cook on a medium flame for 2 to 3 minutes with lid covered.
Allow the launji to cool completely.
Once cooled, serve or store in an airtight container and refrigerate.
