    Eggless Spiced Banana Walnut Bread

    Eggless Spiced Banana Walnut Bread is a flavorsome bread made with spices as cinnamon and ginger included. This has just the right sweetness that it surely makes a delicious breakfast bake.

    I already have a couple of Banana Breads already on the site, I am obsessed with Banana Bread. So decided to have the second week of Bake-a-thon 2018 dedicated to Banana Breads. I will share 3 different Banana bread with different combinations. Today's bread is made with the addition of cinnamon and ginger. While you can go overboard and add a teaspoon of cinnamon powder and half teaspoon ginger powder, I just added a huge pinch of both.

    Even with just a pinch of each, my colleagues were able to feel the cinnamon, though nobody felt the ginger, even though these spices added to the overall effect of the bread. While the loaf was perfectly baked, was moist and tender, I wanted the bread to be a bit more dried. So maybe the ratio of banana to flour should be checked again.

    The loaf had a beautiful banana aroma and flavour and makes a fantastic breakfast bread. The walnuts added a delicious crunch to the bread.     It's obvious I am obsessed with banana flavour, and I still have some to try! I enjoyed making different pound cakes for week 1 and then moving to Banana Breads for Week 2. Everybody at home loved all the bakes to date and my colleagues even asked what next. So when I said it was going to be Banana Breads, they can't wait to try!.

    So here comes the first one in the series of Banana Bread, a simple version of bread with walnut and spices in it.

    Eggless Banana Walnut Bread

    Ingredients Needed:

    240 gms All Purpose Flour (2 cups)
    310 gms Banana, mashed
    1 tsp (4g) Baking Powder
    1/2 tsp Baking Soda
    A Pinch Cinnamon Powder
    A Pinch Ginger Powder
    160 gms Butter softened
    1/4 cup Castor Sugar (50g)
    120 ml Milk (1/2 cup)
    1/2 cup Walnuts, chopped

    How to bake Eggless Banana Walnut Bread :

    Peel the banana and measure. The recipe called for 1.5 cups or 450 gms. However, I had only about 310 gms, approx 2 long ones. I increased the butter to 160 gms. You can use about 1/2 cup (113g) of butter.
    Preheat the oven to 185C. Line a 9" X 4" loaf pan with parchment paper
    In a large bowl, sift the flour, baking powder, baking soda, cinnamon, and ginger
    In a mixing bowl beat butter and sugar, until the mixture is fluffy.
    Next mix in the bananas and blend well.
    Using a spatula combine the dry ingredients to the wet ingredients. Gently fold in the milk.
    Fold in the crushed walnuts. The batter will be thick.
    Transfer the batter into the prepared loaf pan and bake at 185C for 40 minutes.

    • Since the bananas I had were not fully overripe, I microwaved it for 1.5 mins.
    • Preheat the oven to 185C. Line a 9" X 4" loaf pan with parchment paper

    • In a mixing bowl beat butter and sugar, until the mixture is fluffy.
    • Next mix in the bananas and blend well.

      Even i love banana breads very much. Especially for my breakfast. Loved this spiced version of banana bread, and the addition of walnuts will definitely make this bread more nutty and tasty.

      Ginger and cinnamon must have added nice flavors to the banana bread. You have got a good collection of banana breads there. Banana bread is the most preferred quick bread in my home too.

      I have always used cinnamon in banana bread but havn't tried adding ginger. This looks awesome and excited to see the variations of banana bread!!

      Ginger is an interesting addition here... I would say, like Suma, you have a good colleciton of Banana Breads 🙂 I love cinnamon in bakes, so testing this recipe out soon...

      A banana bread with cinnamon and ginger sounds so flavourful and festive too. I too baked with ginger and felt that it has to be more, and recently I read and while talking to a few people here came to know that you really need to add more ginger to get that flavour.
