Certainly, this is another best Banana Bread I have baked. Above all, I have a huge list of Banana Bread Recipes, yet I always end up obsessing about Banana Bread. Seems like, my obsession with Banana Bread continues.
Most noteworthy of today's version is that, its not only Wheat flour but also Vegan. So you have double the goodness in this bread. I baked this bread for my brother who visited us recently. Finally, it was chocolate based cakes for my niece and nephew, while this banana bread for my brother and Hubby Dear.
Another reason for this bake is, I am showcasing wheat based recipes for the second week of BM#64.

This Easy Vegan Banana Bread is a great dish to serve for breakfast as my kid loved it for her breakfast time.

Ingredients
I have used whole wheat flour to make this bread with ripe bananas.
Whole Wheat Flour - You can use the regular Chakki atta or the wheat flour you use to make parathas. Or any whole wheat flour available to you can be used as well.
Bananas - I have used very ripe bananas. Used the Morris or Robusta variety, you can use any variety to make this bread.
Cooking Oil - The moist for the bread comes from the cooking oil used.
Sugar - I have used regular granulated sugar to bake this bread. You can consider replacing it with brown sugar as well.
Nuts - This bread has chopped Walnuts added. The walnuts give this bread an excellent crunch.
Leavening Agent - I have used more of Baking Powder that will react with Oil and Banana and to give that overall rise, have used Baking Soda.
Instructions
We use ripe bananas to make this whole wheat bread. So anytime you have bananas that you feel need to be discarded because its overripe, you can make this bread.

Preheat the oven to 185 C.
Grease and flour your baking tray and have it ready. Tap to remove excess flour. I used a 6-inch Loaf tin.
Pulse the ripe bananas to a puree, transfer to a mixing bowl.
Add sugar, oil, vanilla essence, baking powder, baking soda and whisk well.

Let it sit for 5 mins, then add the wheat flour and mix in gently.
Finally, fold in the chopped walnuts and pat it down.
Bake for 30 to 40 mins at 185C or until the toothpick inserted comes out clean.
Mine got done in 30 mins, I baked it further for 5 more mins and left it to rest for 15 mins.

Substitutions & Variations
Since this is a wheat based baked dish you can try replacing it completely or partially with gluten free flour as well.
Add 1/2 cup Chocolate Chips for the chocolate lovers. Or you can try adding 2 tablespoon cocoa powder to the flour.
Instead of walnuts, replace with dried fruits as well or other chopped nuts like Almond or Pistas.
Equipment
I have used a 6 inch baking tin. You can use a square tray or a circle one as well.
You will need a mixer jar for making the puree or else you can mash it with hands as well.
A mixing jar and a spatula to make the batter.
Storage
This loaf of quick bread stays good when refrigerated for two days. Warm it for a minute before serving.
