Eggless Double Chocolate Banana Bread is an easy loaf cake made with double dose of chocolate with the flavour of banana.
I was planning to make a triple chocolate banana bread, however when I realized I couldn't use dark chocolate in this bread as the main taster couldn't have dark chocolate, I settled with double dose and I was happy with the reception this bread got.
I have been baking alternate days to meet the week 2 bakes, now I will again have to plan well and ensure I don't lag back as bakes don't get over that quickly even after taking it for my colleagues.
This is the second Banana Bread in the Bake-a-thon 2018, where I have been doing Loaf Cakes. The week 1 was Pound Cakes, week 2 is Banana Breads.

Eggless Double Chocolate Banana Bread
Ingredients Needed:
2 cups All Purpose Flour
3/4 cup Banana
1 cup Demerara Sugar
1/4 cup Cocoa Powder
1/2 cup Chocolate Chips
3/4 cup Curds
1 tsp Baking Powder
1/2 tsp Baking Soda
1/4 cup Cooking Oil
How to make Eggless Double Chocolate Banana Bread
Since the banana I used were not ripe, I microwaved it for 2 mins.
Sift the flour along with baking soda, baking powder and cocoa powder and keep it aside.
In a mixing bowl, take the demerara sugar, add the oil and curds. Beat well for about 5 to 7 mins.
Add the soft bananas and blend well.
Now add the flour and mix it gently.
Add the chocolate chips and mix well.
Since the batter was very tight, I added 1 tbsp of water to make it lose.
Preheat the oven at 185C.
Transfer the batter in a greased loaf pan.
Bake in a preheated oven for 40 minutes. I checked at 35 mins and baked for another 5 mins.

I am sorry but I have to admit that I quickly scrolled down your page as my heart couldn't take the sight of another banana bread any more... hehe... I really admire you for baking every other day, I can't do last minute, I will die! One tip is freeze slices in cling film upto three months, and use it up when you crave for cakes. I have tried and it really works. You just need to thaw them to room temperature or bake them in a low temperature oven till it is warm and enjoy it. This way, you won't have the stress of having to finish it off. Since it is eggless, it will stay good...

That looks sinfully delicious...yum..double chocolate with banana is so yum, I too recently baked it for christmas, may be will post next year 😀 for bake-a-thon. I cut into slices and freeze, when required defrost it. It helps when you want to eat or have sudden guest at home....
