    How to make Mango Shrikhand | Aamrakhand Recipe

    Mango Shrikhand or Aamrakhand recipe is a dessert prepared with thick yogurt and ripe mangoes. It is a creamy, rich thick curds, mixed with sweet ripe mango topped with nuts.

    Mango Shrikhand

    Summer always reminds me of enjoying the mangoes and then trying to short list as many dishes I can make during the season.

    Shrikhand is a traditional dish made in Gujarat and Maharashtra and I have always been making different versions like this Dry Fruits Shrikhand.

    Summers also remind me of late nights, the even later mornings, burning the midnight lamps not for school but because you couldn't keep off the fiction you took to read. Enjoying a heavy breakfast, then dashing off to play with friends. Reluctantly coming back home for lunch. But happy that you can then continue reading another book. Come 5 in the evening, off to play a game of shuttle. Followed by a stroll in the lush greens of the neighbourhood. Back home for dinner and slipping away again to meet friends. Coming back home finally to tug at the curtains to ensure no trace of the night lamp sneaking out. Spending another long night devouring the pages at length, trying to beat the author on his story.

    This was how I remember all my summer vacations to have been. Later in years, it was mulling over cookbooks to bake pizzas and cakes or make the best of the season by dishing out many Mango dishes. The many cartons of mangoes that came our way found themselves dressed up as ice creams, soufflés, cakes, drinks and what not! Of course I wasn't adventurous to attempt at a curry, though I wish I did. All this flashed across my mind because I read Tintin's The Crab with the Golden Claws late last night. I love each and every one of them, though this is more special because he meets Captain Haddock

    And the fact that Konda's vacation comes to an end today and she will be now on to Class 5, which again was a very significant year for me. Though I must say I remember each and every year as clearly as if it happened yesterday. Though I may not actually remember what happened yesterday! As always this past 1 and half months just flew but I know for a fact that she spent most of her time watching TV and then playing with her friend K. I did give her some story books to read. Maybe she is yet to get the love for books. Of course we kept her occupied with lots of activities.

    Yes I have a huge bag full of books to be bound, luckily my father in law promised to help me. We will get it done before the last day! It is no fun if I don't get to it on the last day, really!

    Coming to the recipe for today, I was thinking I will make lots of Mango based dishes. But with the lack of mangoes in our city, this was the lone mango dish that got prepared. I almost thought I may not have an entry for my own event, when Amma made this for us and I remembered the good ol' days eating this Shirkhand.

    Ingredients

    Mango - I always make this Aamrakhand recipe dessert with Banganapalle variety as thats what we love. I guess any sweet variety should be fine. We make a pulp or puree and keep it ready.

    Curds / Yogurt - I use regular homemade curds for this dessert. My curds is never sour, so it has always turned out good. However, one has to make sure the yogurt is not sour.

    Sugar - If the mangoes are very sweet, we can add the sugar just to balance out. Else you can skip it altogether. Powdered sugar makes it easy to mix.

    Cardamom powder - Depending on my mood, I add cardamom or skip it. If you love the flavour, I suggest you do.

    Nuts - I love adding slivered Almonds and pistachoes. These nuts take the dessert to another level!

    Saffron - We can either soak the saffron in hot milk or add it as such. When we add milk soaked saffron, it lends its colour. However, make sure you just use 1 tablespoon of milk, else it will make the dessert thin.

    Instructions

    While making this Aamrakhand recipe is relatively easy, preparing the hung curds starts a day ahead. So have all the ingredients ready and make this quick final assembled dessert!

    How to make Aamrakhand recipe

    We start the whole process by getting the thick curds. So you can let the curds hung for at least 6 hours in fridge. Keep it covered and remove the whey collected.
    When you are ready to make, power the sugar and add to the thick curds and beat it well. Next you add the mango puree and blend everything well together.

    Finally top with chopped nuts and saffron, chill for two hours and serve!

    Substitutions & Variations

    If you don't have homemade curds, you can use greek curds or mango flavour curds as well.

    Similar to this mango version, you can use other fruit mixed as well.

    Equipment

    You will need a muslin cloth or a sieve to get the hung curds.

    When you are ready to get this Aamrakhand recipe done, make sure you have a blender to make the mango puree

    Storage

    When making this Aamrakhand recipe, always remember we can store the mango puree ahead and store it in fridge.

    Similarly, make the sugar powder and stock it for easy recipe.

    Expert Tips

    Always add powered sugar to mix as its easy to blend the Mango Shrikhand.

    Hung the curds for the hours required to get thick curds, else your Shrikhand will not be thick.

    Ingredients

    • 1 cup Curds / Yogurt
    • 1 cup Mango Pulp
    • 3/4 cup Sugar
    • 1/8 teaspoon Cardamom powder
    • 1 tablespoon Almonds slivered
    • 1 tablespoon Pistachios finely chopped
    • 1/8 teaspoon Saffron

    Instructions

    • Take the curds and put it in a muslin cloth, place it in a vessel, cover and let it hang for 6 hours in fridge.
    • Power the sugar to a fine powder. Peel the almonds or you can use as such. Finely chop the pistas.
    • You can either soak the saffron in hot milk or use as such as I have done.
    • Once the curds set and the whey is all separated, add the sugar and beat well till mixed.
    • Wash, dice and extract pulp from the mangoes.
    • Make a fine puree if required and add the mango puree to the curds.
    • Beat everything well, add cardamom, nuts.
    • Refrigerate for couple of hours before serving.

      I remember my school days and the excitement of getting new books uniforms and stuff..Shrikhand looks so delish Srivalli.I wanted to make this but am putting off the idea for sometime as there are no takers for sweet dishes at home .

      mango season brings with it a huge dilemma for me...can never decide whether to make aamras or aamarkhand or ice cream!

      I miss summer hols too! I remember my grand mom making vadiyalu and avakai.. I would 'steal' a few pieces of raw mango! Great recipe.. perfect for the heat we're having here in LA.
