Eggless Christmas Nuts and Fruits Muffin is a simple and easy muffin you can make for Christmas. The soaked dry fruits makes this a delicious muffin to enjoy!

I have always had the tradition of baking a Christmas Cake for the Christmas Day. This year I had to break it and had to make do with these muffins. Since the theme was muffin, I wanted to make sure the muffin had the regular ingredients that go into the Christmas Cake.

I couldn’t post it on the day, anyway this finally comes up today.  This Muffin is for my eleventh  day of Bake-a-thon and you can check out the collection at the end of the post for my friends who are doing this along with me.Eggless Christmas Nuts and Fruits Muffin

Eggless Christmas Nuts and Fruits Muffin

Ingredients Needed:

1 cup Milk
2 cups All purpose Flour
1 tsp White Distilled Vinegar
1 cup Sugar powdered
1/2 cup Olive Oil
1 tbsp Baking Powder
1 tsp vanilla extract
1/2 cup Orange Juice
1 tbsp Tutti Frutti
1 tbsp Walnuts
1.5 tbsp Almonds
1 tbsp Raisins
1 tsp Sultana raisin

How to make the Muffins

Soak the nuts and fruits in the orange juice for 30 mins.
Preheat the oven to 185 degrees C
Line the 12 cups muffin pan with paper liners or just spray it with oil.
Add white vinegar to the milk. Keep it aside for 10 minutes.
Now take all purpose flour, sugar, baking powder and salt in a bowl. Mix it very well using wire whisk.
Make a well in center of the dry flour mixture. Add prepared milk mixture, oil and vanilla extract.

Combine everything together. Do not over mix it.
Add nuts and fruits along with the juice. Fold it in.
Divide the batter in 12 muffin cups.
Bake in preheated oven for 12 minutes or till the toothpick inserted in center of the muffins comes out clean. Then remove it on wire rack.
After 5 minutes remove the muffins from the pan and let it cool completely on wire rack.

  1. I have to say that these muffins looks really cute with the domed top… I am not a fan of fruit cakes, but this one with the orange flavor is definitely tempting me…

  2. That’s a cute little muffin Valli, that’s an innovative idea to make Christmas nuts and fruits muffins. Also, a good way to portion control during the holidays.
