Ingredients You will need
Spice Powder - We use dry roasted whole spice ground to powder to make enhance this dish.
Tomatoes - The sourness and balance comes from adding tomatoes to the dry dish. The gravy is cooked until the water evaporates and everything coats the chops well.
Instructions with Step by Step Pictures
For the Spice Powder
Dry roast the whole spices until aromatic. Cool it down and grind to a powder. Keep it aside.

For Making the Chops
Wash and drain the mutton chops
Take the chops in a pressure cooker with a pinch of turmeric powder, 1/4 teaspoon salt. Pressure cooker for 2 whistles.
Once the pressure falls, heat a kadai with oil, add cinnamon, and clove.
Next, add the finely chopped onions, saute until the onions change colour.
Drain the water, you can add it later. Add the cooked chops and mix well. Let the chops get well cooked in oil for 5 mins on low flame.
Now add the ginger-garlic paste and combine.
Next add the turmeric powder, chopped tomatoes along red chili powder.

Cook on low flame and add salt after 5 minutes.
Now add the drained water and cook on high flame for 5 to 7 minutes.
Add the ground spice powder, keep stirring and allow the water to be evaporated. By now the masala is well coated and you will have dry chops.
Add chopped coriander leaves and serve as a side dish.
Substitutions you can do
You can use Curds instead of Tomatoes if you don't have it.
You can also use Garam Masala, coriander powder. However, it will change the taste.

FAQs
The secret to quick and tender chops is using a pressure cooker (or Instant Pot). By pressure cooking the meat for just two whistles before sautéing, you cut the cooking time in half compared to slow-simmering on the stovetop, ensuring the meat stays juicy and falls off the bone.
Absolutely! In fact, this recipe is perfect for Easy Lamb Chops. Since lamb is generally more tender than mutton, it may even cook slightly faster. The dry spice rub used here complements the natural flavor of lamb beautifully.
To keep with the "quick and easy" theme, these chops pair perfectly with simple basmati rice, plain paratha, or even a fresh green salad. Because this is a semi-dry dish, it also works great as a high-protein starter for a weekend dinner party.

Notes
- Meat Selection: If "Mutton" isn't available at your local butcher, Lamb Chops are a perfect substitute. They are slightly more tender and may require 1 less whistle in the pressure cooker.
- The Spice Level: This is a "medium-heat" dish. If you prefer a milder version, reduce the red chili powder by half or use Kashmiri Chili Powder for a bright red color without the intense heat.
- Shortcuts: If you are in a rush, you can substitute the whole spices with 2 teaspoons of a high-quality Garam Masala, though the fresh-ground version is recommended for the best aroma.
