    Baked Semolina Cake | Baked Upma in Muffin Tin

    Baked Upma is your regular South Indian Upma baked in an Oven. You can serve this Semolina cake as single serve as you bake in a Muffin Tin.

    Savory Semolina Cake is baked in Oven. Though this is not your typical cake, using the muffin tin makes final dish as cake.

    Baked Upma

    I have a fancy of making different dishes in a Muffin Tin and in the process think of vague things to do. However, today's dish is almost similar to a regular baked semolina cake, albeit being a savory one and the same as the regular Upma recipe. After making Thakkali Upma, I wanted the recipe to be almost the same, except making it for a single portion.

    After making upma for the previous night's dinner, I can't be again serving the same even though cooked in different appliances. So I made this for myself. The batter has Baking powder in it. And the baking time is 25 minutes. The taste and texture were fine. I will have to mention that it was more dense and soft. I was only looking at the time. Also since I baked it in a Muffin tin, the texture might have changed. If we bake this in a regular tray, the texture will be more cake-like.

    Anyway, I enjoyed this experiment and in my next post will showcase whats the best method to make Upma.

    This combines both BM#83 make a dish in different appliances and Bakeathon 2017. As part of the theme, I made Thakkali Upma on stovetop, and Microwave Upma.

    Ingredients

    Semolina / Bombay Rava - We use the fine rava called the Bombay Rava to make this savory upma. We can always use grits or other varieties as well.

    Vegetables - I have used only onions, tomatoes, in this upma. You can make it more healthy by adding more vegetables too.

    For Tempering - Regular tempering ingredients like mustard, chana dal, curry leaves are used.

    For Spice - I have used Green Chilies for spice. You can always use dried Red Chilies as well. It will surely make a difference to the taste.

    Leavening Agent - As we are baking the upma, a tiny pinch of baking powder will help in cooking it properly. Otherwise we normally don't add baking powder to regular Upma.

    How to make upma in Oven

    In a bowl, mix all the ingredients together and let it sit for 10 mins. While the mix gets ready, you can get the muffin tins ready by greasing it.

    Once you are ready to bake, pour the batter into the muffin dents.

    Preheat the oven to 185C and bake the upma for about 25 mins.

    You can start checking if it's done after 20 mins. Mine got done by 25 mins.
    Serve hot with chutney.

    Baked Upma is an attempt at baking regular South Indian Upma in an Oven. This Semolina cake is easy to serve as its baked in a Muffin Tin.

    Ingredients

    • 1/2 cup Semolina /Rava
    • 1 cup Water
    • 1/4 cup Onions finely chopped
    • 1/4 cup Tomatoes finely chopped
    • 1 Green Chillies finely chopped
    • A Pinch Turmeric Powder
    • Salt to Taste
    • Handful Curry Leaves
    • Handful Coriander Leaves
    • 1/4 tsp Mustard Seeds
    • 1/4 tsp Urad Dal
    • 1/4 tsp Chana Dal
    • Handful Cashewnuts
    • 1 tbsp Curds / Yogurt
    • 1/4 tsp Baking Powder
    • 1 tsp Ghee

    Instructions

    • In a bowl, mix all the ingredients together and let it sit for 10 mins.
    • Grease the muffin tins and pour the batter into it.

      Upma in muffin tins are so cute. Haha, this weekend, it was handvo everyday and husband was curious why I was having such a hard time with handvo. He thought I made it multiple times either to perfect the recipe or to get good pictures.. Then I had to explain it is handvo in 3 different appliances hence cooking and working on handvo for 3 days. And that I was working on 3 different posts and not one. 🙂
