Chocolate Chip Cookies are the popular cookies made with a twist that adds more crunchiness to the baked dish. With chocolate chip these eggless cookies make a delicious sinful treat anytime.

    Chocolate Chip Cookies

These Chocolate Chip Cookies are very easy to bake. With chocolate chips you will enjoy these anytime. For the Bake-A-thon 2022, I am revisiting some of my old bakes.

I am revisiting these cookies that were originally baked in 2012 when my boys were six years old. Reading this now makes it so nostalgic as these simple Eggless chocolate chip Cookies are loved very much today as well. And still Chinnu will not touch it as it is not brown in colour.

As expected he was eating only the chocolate shortbread. But other two loved this and wanted more. I liked the way the dough didn't spread so much but had that rustic cookie look overall.

My boys were eagerly waiting to taste and wanted to know what I was doing with a glass of milk. Well I simply said these cookies taste great with milk. Now it's another thing that I should get them eat this along with it.

    Ingredients

These cookies use pantry available ingredients and also I have used rice flour to make the baked cookies have that crunchy texture.

    • All-Purpose flour - I have baked with just half cup of Maida and this yields around 15 medium cookies and helps when you make many varieties.
    • Rice Flour - Rice flour adds a good texture to the baked dish.
    • Butter - Use unsalted butter at room temperature so that you can cream it well.
    • Sugar - Use powdered sugar and increase if you want more. You can check when the dough is ready as well.
    • Chocolate chips - Use around 50 gms of these chips or you can use chunks too

    Instructions

How to make Chocolate Chip Cookies 1

Take both the flours in a wide bowl and sieve well to remove lumps if any.
In another bowl, take the butter and cream well.
Add the powdered sugar and vanilla essence and continue to cream until you get a light and fluffy mixture.
Slowly add the flour and mix to form a soft dough.
At this stage the dough will be sticky, do not add more flour.

How to make Chocolate Chip Cookies 2

Add the chocolate chips and combine everything together.
Grease your palm and divide into small balls, flatten on a greased baking tray.
Preheat the oven to 185 degrees.
Once the oven is hot, place the tray inside the range and bake at 185 deg C for 10 - 12 mins
Cool and store in an airtight container.

    Substitutions & Variations

If chocolate chips are unavailable, you can use 1/2 cup of dark chocolate.
Rice flour gives a beautiful crunch to the cookies and should not be skipped.
If you want to make the dough as chocolate you can always add cocoa powder to the dough.

    Storage

You can freeze the dough for over 2 months at least. Bake cookies will stay fresh and good for at least a week.

I love the color of your chocolate chip cookies! The chocolate chip shows up very well since you made the cookies with sugar. I have only used brown sugar before but I will be making mine this time with powdered sugar.
