    Eggless Vanilla Muffins Recipe is a Basic Eggless Vanilla Muffins recipe that you can very quickly make and adapt to bring in so many variations. Very simple and easy recipe to start your baking!

    When I was making a whole lot of chocolate-based muffins, I thought I might as well bake one batch of vanilla muffins. How much can I keep alternating with just chocolate or cocoa powder? When I told this to Chinnu, he said with a stern voice that he would not eat it as it's not brown. I asked him why he should think so, he simply said he won't touch it as it's not brown. And he kept up his word. We finished it off among ourselves.

    When I think about Vanilla cake, I am always reminded of my college days when I was on a baking spree. I used to bake so many different varieties and my friends used to love dropping by. It was also a time when I didn't bother much about baking with eggs, even though I wasn't eating it. I simply used to bake and share with others. Somehow now I won't want to spend time baking a cake with egg when I won't eat it. I guess a lot of this thought has to do with age. As we grow older, we end up getting attached to a certain way of thinking.

    A lot of things end up being that way. For example, I have never tasted a meat-based Biryani. When I was eating meat, Biryanis were not that famous. The only version that Amma used to make was the Nawabi Chicken Biryani and I vividly remember it being out of the world. We still get the same feedback even today. I don't miss not having tasted, it's simply a fact, the final note. Certain things will never happen, the finality in that thought is amazing. Well I know I end up with such poignant thoughts at this time of the year. However with a funny face forward for much more to come!

    Ingredients

    For the Batter

    • 1 cup All-Purpose Flour
    • 1 teaspoon Baking Powder
    • 2 tablespoon Butter unsalted
    • 2 -3 tbsp Sugar Powdered
    • 1/2 cup Milk
    • 1 teaspoon Vinegar
    • 1 teaspoon Vanilla Essence

    Other optional Ingredients

    • 1/2 cup Chocolate Chips
    • 1/2 cup Chocolate Sauce for drizzling over the top

    Instructions

    How to bake Vanilla Muffin

    • Take a wide bowl, sift the flour along with the baking powder and keep it aside.
    • In another bowl, take the butter and cream it well with sugar.
    • Now slowly add the flour mix to the creamed butter as you alternate with milk and vinegar until you complete the entire batch.
    • Make sure you don't whisk it very vigorously.
    • Pour into a lined muffin tray and bake in a preheated oven at 185 C for 13 - 15 mins.
    • Allow it to cool over a wire rack before serving warm.

    Notes

    If you are adding chocolate chips to the batter, you can add the chops once the batter is ready to be baked.
    Simply mix again gently and pour into the molds.
    Once it cools down, you can drizzle chocolate syrup or sauce over the muffins as well.

      You took a break from cookies now? Nice. I like vanilla more than chocolate even when my kids are totally opposite of that.
