    Ratlami Sev is a very popular snack in the Ratlam city region of Madhya Pradesh. In this version, the spice mix used is pepper powder and cloves.

    The extra addition of clove powder along with pepper makes it slightly different from the other version I posted on Spice your Life. I referred to this for details and it said that this popular sev is added with chat food as well.

    Though I wanted to write so much about how this whole week went by, as this was the highlight of this entire Mega BM, I couldn’t spend time writing as we are traveling. So I had to schedule all the posts ahead.

    This is for Day 3 under BM#104 Sweets & Snacks where we are doing Madhya Pradesh today with Ratlami Sev.

    Week 1 - Sweets (Indian Halwas)

    Day 1 is Carrot Coconut Milk Halwa
    Day 2 is Singhara Ka Atta Halwa
    Day 3 is Kuttu Ka Halwa
    Day 4 is Rajgira Halwa
    Day 5 is Sweet Potato Halwa
    Day 6 is Akhrot Ka Halwa

    Week 2 - Snack from the same State (Rajasthan)

    Day 1 is Rajasthani Mirchi Vada
    Day 2 is Pudina Tikoni Paratdar Mathri
    Day 3 is Matar Kachori
    Day 4 is Rajasthani Methi Mathri
    Day 5 is Pyaz ki Kachori
    Day 6 is Kanji Wada

    Week 3 - Snack of our choice (Rice based Traditional Snacks)

    Day 1 is Kai Murukku
    Day 2 is Sakinalu
    Day 3 is Seepu Seedai
    Day 4 is Aval Murukku
    Day 5 is Mundhiri Murukku
    Day 6 is Spinach Murukku

    Week 4 - Mandatory Week

    Day 1 is Andhra - Pudina Pappu Chekkalu
    Day 2 is Gujarat Andhra - Tawa Handvo

    Ratlami Sev ~ Madhya Pradesh Special

    Ingredients Needed:

    3 cups Besan / Chickpea flour
    1/2 tsp Clove Powder
    1/4 tsp Pepper powder
    1/4 tsp Carom Seeds / Ajwain
    1 tsp Red Chilli Powder
    A Pinch Asafoetida / Hing
    1/4 tsp Garam Masala
    A Pinch Cooking Soda
    1 tsp Black Salt
    Cooking Oil for deep frying

    How to Make Ratlami Sev

    In a wide bowl, take all the dry ingredients along with two tablespoons of oil. Add enough water and knead the dough for sev.
    Now, take a sev maker, and with little oil grease the sev maker from inside and fill it with enough dough.
    Heat oil in a Kadai and when the oil is heated, press the dough through the sev maker in the circular movement over, the hot oil.
    On a low to medium flame fry the sev from both the side until golden in color. Drain the sev using a slotted ladle and transfer to a kitchen towel
    Once cooled sprinkle black salt and toss well.
    Cool and store in an airtight box.

      Beautifully done sev Valli, love the addition of garam masala. That would've given a unique taste to the sev.
