    Tawa Handvo is a Gujarati Special Dish made with rice and lentils. It can be referred to as Savory Rice Lentil Cake, made healthy by including vegetables in it.

    This handvo can be cooked in different ways, like tawa, baked, and the latest would be the Insta Pot methods. I will be sharing how I made Tawa Handvo with mixed vegetables in the cake.

    We are doing our day 2 of Mandatory week in BM#104 Sweets & Snacks, with Gujarati Special Handvo, and all the members participating will be sharing their own take on this recipe. Since I am doing both, I had to come up with different recipes and different cooking methods.

    For this recipe, I managed to make two different recipes in two different cooking methods. If you are interested to know how I made this in a different method, check out Spice your Life!

    Tawa Handvo
    Week 1 - Sweets (Indian Halwas)

    Day 1 is Carrot Coconut Milk Halwa
    Day 2 is Singhara Ka Atta Halwa
    Day 3 is Kuttu Ka Halwa
    Day 4 is Rajgira Halwa
    Day 5 is Sweet Potato Halwa
    Day 6 is Akhrot Ka Halwa

    Week 2 - Snack from the same State (Rajasthan)

    Day 1 is Rajasthani Mirchi Vada
    Day 2 is Pudina Tikoni Paratdar Mathri
    Day 3 is Matar Kachori
    Day 4 is Rajasthani Methi Mathri
    Day 5 is Pyaz ki Kachori
    Day 6 is Kanji Wada

    Week 3 - Snack of our choice (Rice based Traditional Snacks)

    Day 1 is Kai Murukku
    Day 2 is Sakinalu
    Day 3 is Seepu Seedai
    Day 4 is Aval Murukku
    Day 5 is Mundhiri Murukku
    Day 6 is Spinach Murukku

    Week 4 - Mandatory Week

    Day 1 is Andhra - Pudina Pappu Chekkalu

    How to make Tawa Handvo

    Tawa Handvo | How to make Mixed Vegetable Tawa Handvo

    Ingredients Needed:

    1 cup Rice
    1/2 cup Toor Dal
    1/4 cup Split Yellow Moong Dal
    2 tbsp Chana Dal
    2 tbsp Urad Dal
    1/2 cup Curds / Sour Yogurt
    Salt to taste
    1 tsp Sugar
    1 tbsp Green Chilli Paste
    A Pinch Turmeric Powder
    1 tbsp Ginger Paste
    2 cup Carrot grated
    1 cup Cabbage
    2 tsp Red Chilli Powder
    1 tbsp Baking Soda
    1 tsp Lemon Juice

    For Tempering

    2 tbsp Cooking Oil
    A Pinch Asafoetida / Hing
    1 tsp Mustard Seeds
    Handful Curry Leaves
    3 tbsp Sesame Seeds
    1 tsp Ajwain / Carom Seeds

    How to make Handvo

    Wash and soak the rice with all the dals in enough water for 2 hours.
    When ready to grind, drain the water and grind to a coarse paste by adding enough water to make a batter of medium-thick consistency.
    Transfer to a bowl, add curds and mix well. Let it ferment for at least 5 to 6 hrs or overnight.
    When ready to make, add in all the spices, pastes and grated carrot, cabbage, and baking soda. Mix well.
    In a nonstick pan, heat oil, temper with mustard seeds, ajwain, hing, curry leaves, and sesame seeds.
    Pour the batter into the pan and spread well. Cover and cook on a slow flame for 9 minutes or till the base turns golden brown in colour and crisp.
    Lift the handvo gently using 2 large flat spoons and turn it over to the other side. Or you can flip it over a flat plate and reserve it again.
    Cover and cook again on a slow flame for another 7 minutes or till it turns golden brown in colour.
    Cool slightly and cut into square pieces.
    Serve with green chutney.

      Pan handvo / tava handvo is the latest cooking method for handvos here . They make individual ones , just like a uttapam . Simple , quick method is great when we have less number of people eating it . Perfectly made handvo !

      The making of handvo in a pan reminds of a dibba rotte recipe. We can even make them thinner and be done with it if there are not many to share.
