    Fat-Free Eggless Chocolate Cake is a delicious cake without butter and eggs. This is a lockdown recipe and you can make it when you don't have and need a cake to bake!

    Can't believe we are heading for another lockdown and here I am sharing a recipe that was baked during lockdown last year. My kids love my cakes and it hardly ever stays beyond a day. However, I never bake for any of our birthdays or anniversaries. We always order from the shop and make sure it is eggless as well.

    As the whole world around, the year 2020 was spent at home, with just basic groceries we managed to get and none of the cake shops were open. May starts with birthdays and anniversaries coming up. So I had to bake the cake myself. Overall these years, I never bake for any special occasion at home, opting to be free and relaxed.

    This delicious cake is part of the Lockdown Recipes with basic pantry ingredients!

    Over the past year, I found myself not finding time to bake anything. Today's cake is what I baked for Konda's birthday. Hopefully, we will have the cake shop this year around.

    One cake was this Eggless Chocolate Cake without Cocoa powder and Baking Powder, the other was this Fat-Free Eggless Chocolate Cake. Baking without some of the ingredients actually made me realize how much we blindly assume we will always have things on stock!

    This cake is No Butter, No Eggs, and Whole-wheat. An Eggless Chocolate Cake doused with dark ganache made with skimmed milk, was still very delicious topped with sprinkles.

    Sharing this as part of the A to Z Easy Family Dinner Ideas for F. In this series, I am sharing all the different courses and not just main dishes. A dessert surely makes the meal complete. This cake is baked with basic ingredients and hardly takes about 40 mins from start to end.

    Fat Free Eggless Chocolate Cake

    Fat Free Eggless Chocolate Cake is a delicious cake made without butter and eggs. This is a lockdown recipe made when butter was not available and we needed a cake to be baked.

    Ingredients

    For Chocolate Cake

    • 1.5 cup All Purpose Flour / Wheat Flour
    • 1/3 cup Cocoa Powder
    • 1 tsp Baking Soda
    • 1 tsp Baking Powder
    • 1 cup Sugar
    • 1 cup Milk (at room temperature)
    • 1 tsp Vanilla Essence
    • 1 tbsp Vinegar

    For Ganache Frosting

    • 50 ml Milk skimmed
    • 150 gms Dark Chocolate (you can use semisweet if you don't have dark)
    • 1 tsp Vanilla Essence

    To Assemble

    • 1/4 cup Sugar
    • 1/2 cup Water
    • Sprinkles for topping

    Instructions

    How to make Fat Free Eggless Chocolate Cake

      For Chocolate Cake

      • In a bowl take flour, cocoa powder, baking soda and baking powder and sift a couple of times. Keep aside.
      • In another bowl, take milk at room temperature. Add vanilla essence and sugar to it. Whisk well to dissolve sugar.
      • Add dry ingredients to the milk and mix gently.
      • Grease a 8 inch round baking tray, lined with a parchment paper.
      • Pre-heat the oven at 180 C.
      • Add vinegar to the cake mix just before pouring in the baking pan and mix gently. Pour in the greased pan.
      • Bake at 180 C for 35 - 40 minutes till the toothpick inserted comes out clean.
      • Mine got done by 35 mins.
      • Let the cake cool in pan for 10 minutes.
      • Transfer it to wire rack to cool completely.

      For the Sugar Syrup

      • In a pan, take sugar and water. Melt until sugar melts.
      • The sugar syrup need not be a thick syrup.

      For Ganache

      • Heat 50 ml of milk to boiling hot. Remove from heat.
      • Add grated chocolate and vanilla essence to milk. Whisk to get a smooth chocolate ganache.

      To Assemble

      • Once the cake cools down, slice through the center to get two equal halves.
      • Drizzle the cake with sugar syrup, apply two tablespoon of ganache over it.
      • Top it with the second layer, drizzle again with syrup and pour the ganache over it.
      • Decorate one side with sprinkles.

        It’s a good idea to order outside and relax with the family and enjoy the day together. I still don’t know how to do that. My son reminds me that I am the only one who likes to bake her own birthday cake :-)). Hopefully for you this year the bakery would be up and running!

        Ya the lock down days are really tough and I am sure each family has a way to cope with this. Celebrating birthdays with homemade cake is a sure shot way to boost our morale. The cake looks good with all the chocolate there.

        Cake looks wonderful valli! yes, can totally understand about lockdown! but then it is during necessities we do don our thinking and creative caps! Love this fat-free chocolate cake, that ganache on top makes it looks rustic!

        We love homemade cakes to the bakery ones. Lockdown or no lockdown - we bake at home. The chocolate cakes are always a favourite with us and this looks fantastic.

        Today was my sister's birthday and she was mentioning that her husband got her a cake at 6 am. 🙂 Hopefully the COVID situation in India gets better and you can buy cakes from the bakery. The cake sounds and looks good and I bet your daughter must have enjoyed the cake.

        This is the best cake that I have tried. It's so amazing and fluffy without any fat. Tried it with 1 cup oats and half cup maida also. Turned out as amazing as the maida cake . Thank you so much.
