Chinese Style Garlic Noodles are Quick & Easy Family Dinner Ideas you can whip in no time. This is so apt for a weeknight meal and you get loads of veggies along with flavoursome garlic in it.
These noodles are vegan and aromatic because of the slightly burnt garlic that adds a lot of flavours to the noodle. I mostly keep the vegetables to basic ones as my kids love and don't eat many varieties.
We love noodles and make them often for either breakfast or dinner. This time when I had made the Fusion Platter, the dishes included were fusion dishes with Roti where I made Roti Noodles, Roti Nachos, Chinese Bhel, Paneer Tacos, and Gulab Jamun Truffle. Since Chinnu is not fond of these dishes, I decided to include noodles that he likes. So I included Garlic Noodles in the menu.
These chili garlic noodles are easy to make and everybody's favorite. I had previously made Vegetable Hakka Noodles and Sweet Corn Vegetable Noodle Soup that are great weeknight meals as well.

Ingredients used in making this Garlic Noodles
I have used Hakka Noodles, you can use spaghetti as well if you want. Use vegetables of your choice. All colours of Capsicum taste great in this dish.
You can retain some of the pasta boiled water and use it in this. However, tossing it in oil after it is boiled makes it good.
How to make Garlic Noodles
Bring a pot full of water to a rolling boil, add a pinch of salt and the noodles.
Let it come to a boil, while you keep stirring it to get it well mixed with water.
Cook as per the packet instructions, reserve 1/2 cup of pasta water to be used if required later.
Pour normal water over the noodles to prevent further cooking. Drizzle a tablespoon of oil over the noodles.
In a mixing bowl, take all the ingredients listed for the sauce and mix well.
Heat a Kadai/wok, add oil and crushed garlic. Saute until golden brown.
Now add the onion julienne, spring onion white, and saute until translucent.
Toss in the finely chopped vegetables and stir fry for a few minutes making sure the vegetables don't turn soggy.
Pour the prepared sauce, mix well and toss in the cooled noodles.
Toss the noodles well so that it gets mixed with the vegetables and the sauce is absorbed well.
Finally, garnish with the spring onion greens.
Remove from heat and serve immediately.

Ingredients
Ingredients Needed for making Garlic Noodles
For the Noodles
- 250 gms Hakka Noodles
- 1 cup Mixed Vegetables (I used Carrots, Green Capsicum, Cabbage, Beans)
- 4 - 5 cloves Garlic finely minced
- 1/4 cup Onions
- 1/4 cup Spring Onions
- 3 tsp Cooking Oil
- Salt to taste
For the Sauce
- 2 tsp Soy Sauce
- 1 tsp Green Chilli Sauce
- 1 tsp Sugar
- 1/2 tsp Garlic Powder
- Salt to taste
- Pepper to taste
- Red Chilli Flakes to taste

Garlic noodles are my family favorite. At least once a week we make these. Though I add lots of garlic, but never added garlic powder. I'm sure it must be enhancing flavor. Will try next time by adding garlic powder. By the way your fusion menu sounds very interesting:)
