    Microwave No Oil Kothimbir Vadi

    Microwave No Oil Kothimbir Vadi is a guilt free savory snack made with besan, coriander leaves and spices. These can be cooked under 5 minutes and make a filling snack.

    For the Day 4, week 4 of mandatory recipes of BM#104 Sweets & Snacks, it’s Kothimbir Vadi from Maharashtra. While I do have quite a few Maharashtrian dishes on both the blogs, it was surprising that I am yet to post this Kothimbir Vadi.

    Since I have to pick two different recipes, I decided I will also follow different cooking method for this recipe. While its a sinful tasting deep fried Kothimbir Vadi on Spice your life!, its healthy zero oil version on this space. I adapted it from Tarla Dalal. This comes with curds included in it as microwave cooking requires more moisture.

    We all enjoyed out meal and even though there were some deep fried dishes on the table, this no oil vadi surely stood out!

    No Oil Kothimbir Vadi
    Week 1 - Sweets (Indian Halwas)

    Day 1 is Carrot Coconut Milk Halwa
    Day 2 is Singhara Ka Atta Halwa
    Day 3 is Kuttu Ka Halwa
    Day 4 is Rajgira Halwa
    Day 5 is Sweet Potato Halwa
    Day 6 is Akhrot Ka Halwa

    Week 2 - Snack from the same State (Rajasthan)

    Day 1 is Rajasthani Mirchi Vada
    Day 2 is Pudina Tikoni Paratdar Mathri
    Day 3 is Matar Kachori
    Day 4 is Rajasthani Methi Mathri
    Day 5 is Pyaz ki Kachori
    Day 6 is Kanji Wada

    Week 3 - Snack of our choice (Rice based Traditional Snacks)

    Day 1 is Kai Murukku
    Day 2 is Sakinalu
    Day 3 is Seepu Seedai
    Day 4 is Aval Murukku
    Day 5 is Mundhiri Murukku
    Day 6 is Spinach Murukku

    Week 4 - Mandatory Week

    Day 1 is Andhra - Pudina Pappu Chekkalu
    Day 2 is Gujarat Andhra - Tawa Handvo
    Day 3 is Madhya Pradesh - Ratlami Sev

    How to make Kothimbir Vadi

    Microwave No Oil Kothimbir Vadi

    Ingredients Needed:

    1 cup Besan / Chickpea flour
    3/4 cup Coriander Leaves finely chopped
    1/2 cup Curds / Yogurt
    1 cup Water
    1 tbsp Rice Flour
    1 tbsp Lemon Juice
    1/2 tsp Sugar
    1/2 tsp Ginger Paste
    1/2 tsp Green Chilli paste
    2 tsp Sesame Seeds
    A Pinch Turmeric Powder
    1 tsp Red Chilli Powder
    1 tsp Coriander Powder
    A Pinch Asafoetida / Hing
    1 tsp Cumin Powder
    Salt to taste

    How to make Zero Oil Maharashtrian Kothimbir Vadi

    In a bowl, mix together besan, turmeric, ginger chilli paste, chili powder, coriander powder, cumin powder, hing, rice flour, salt and curds. Add enough water to make a thick batter.
    Whisk well to remove lumps if any.
    Add finely chopped coriander leaves, saute well
    Next pour the batter into a microwave bowl.
    Microwave for 2 to 3 mins in interval of a minute until it firms up.
    Allow to cool and Slice it into 2 inch squares and keep it ready.
    Heat a kadai and roast the sesame seeds, then add the cubed vadi and toss well.
    Serve hot with green chutney

      Of course the deep fried vadis taste fantastic , but I have always preferred a low calorie version , healthier one ! This MW version is innovative , just what I would love to try and eat without guilt . Thanks for it !

      I make kothimbir wadi regularly but a steamed and lightly fried version. This microwave version seems to come handy during time crunches. I will surely try it out.

      The mw version sounds like a short cut version and works best when you are short of time. Interesting that it is a no oil as well. I am surprised that you have prepared batter instead of dough for both of the versions.
